Back on the wagon with pecan flour bread …

I have fallen off the wagon a few times in the past. And got right back on every time. And never before have I experienced the negative effects of grain on my body like this last fall.

I have started to get a gout-like-pain in my right hip. Which steadily got worse over the last few days. (It’s just so easy to revert back to old ways and include pasta, bread, rice, potatoes and sugar in their traditional forms …) And the light dawned on me as it got increasingly more difficult to get up and walk normally (not like the lurching undead we see in the movies), I couldn’t even sleep on my right side without having this piercing pain in my hip. GRAIN and SUGAR. GRAIN. SUGAR. Damn.

Since cutting back on most of the poison mentioned above, I have been able to walk more like I have my wits about me – painless and not lurching at all.

Enter: the pecan bread.

Last night I baked this small flattish bread. I recon it would work as well in the microwave (2 minutes on high) as in the oven, I baked it @ 180 degrees C in a silicone bread form in the oven till the knife came out smooth – about 20 minutes.

The original recipe:

150 g almond flour

1 tsp baking powder

2 tbsp oil

2 eggs

salt

Mix and bake.

I substituted the almond for pecan flour and used olive oil. This mix was a little dry and in haste I added a little bit of cream – this made it a bit more moist. Also, I did not add enough salt, so I will add a little more to my avocado topping.

All in all, not bad.

Back on the wagon with less pain. This is definitely the way I need to go to reach a ripe old age of 60.
